End of Semester FINALLY

Wow this semester really kicked my butt!! I mean REALLY kicked my behind. I knew that Research Methods was never going to be a cake walk because HELLO statistics. But I wasn’t quite prepared for the full reality of the situation. This is the first time that I have genuinely felt completely out of my depth in this course and boy did it show!! I will be lucky to have passed if I am being perfectly honest. But I suppose the saving grace is if I fail then I can re-take the module.

But Moody is really settling into hockey which is awesome. He has started really going after the ball during games which is great. I think at first he was a bit timid having not played before and with sticks cracking and flying it looks intimidating from the sidelines let alone from in the thick of it. But he has been disappointed if we have had to miss training or a game (we have had to do both because we have been sick through out the season due to the regular winter chills and bad luck).

Mischief is loving being able to go as well, while Moody trains Mondays and Thursdays she is only training Thursdays but eagerly looks forward to it every week. She has made a little friend who she hangs out with when Moody is playing on the weekends and who is on her team during the week which I think has really helped, being the girly girl that she is I don’t think that she would have stuck it out if it was all boys.

Tinman and I have had yet another run in. He visited the kids and at the end of the visit was promising Mischief that he would call and visit soon. This is the man who hasn’t actually called his kids in 6 months, he hadn’t visited in 6 months either. He hasn’t picked up the phone in 3.5 months…. yet he was making promises he had no intention of keeping, because it makes him feel good to make them. He also isn’t here to see the effect that it has on them when he breaks those promises that roll so easily off his tongue… so I challenged him on it, got called a slut, told EVERYONE was talking about how I was putting it out around town and was told that he has met someone who makes him happier than I ever did for my trouble…. so I am done going the extra mile for him. Or rather I am done keeping him informed about all of the little things so that when he talks to the kids he has some clue about what is going on. If he wants to keep up with them then he can call them, visit them, FaceTime them any time he likes. We will continue to call on our regular schedule and whenever the kids ask to call as per usual but all the extra stuff, the email updates, the photos, the texts when they do something special…. I completely fail to see why the heck I would keep doing that. I would NEVER in a million years stand in the way of him having a great relationship with the Messmakers but I am done attempting to force him into it.

Meanwhile he hasn’t been paying his child support for the last 6 months, which of course means that I am stuck in a financial hotspot and have been for a while. Don’t get me wrong I am so grateful that we live in a country where my studies are supported and where I am able to house and feed and clothe us by virtue of the support we receive from the government. But it isn’t enough, not really. Part of it is that the government (quite rightly) assumes that the child support will be paid and so that will pay for the extras like hockey and dance lessons and the little extras. But when that doesn’t happen things get tight. Tinman has made it perfectly clear he has no intention of ever paying unless forced (and unfortunately for the time being there is no way to force him to do anything), which leaves me with whinging and griping or getting a job. So I am choosing the latter. I have been searching now for a couple of weeks, I have made enquiries about before and after school care, I have started looking at options outside of what I was doing before but it is a hard market at the moment. Part of the problem is the mining slump, there are a whole heap of qualified administrators out there who don’t have a seven year gap in their resume. But that is just another hurdle to be overcome. I was pretty interested though in real-estate. It’s one of those industries that I have always wanted to explore but I have never really thought it was possible. At the very least it will give me a great grounding in an area that I am really interested in and something to really sink my teeth into for the next few years which is always a plus.

Meanwhile I am beyond happy to be on holidays. Such a relief to be free and clear for the time being. It leaves much more time for the fun stuff and potentially getting more done around the house so that I can get back on top of everything. In that vein I am attempting some freezer cooking at the moment. I have been pinning crockpot freezer recipes and have a tiny stash of 4 in the freezer already

With another in the crockpot right now.

In the freezer we have:

  • Teriyaki Chicken
  • Lemon Garlic Chicken
  • Chicken and Broccoli Casserole
  • Mushroom Stroganoff

and I have just added Red Lentil and Cauliflower curry (which isn’t in this picture because I  JUST put it in 🙂 )

The one  in the crockpot right now is the Hawiian Chicken recipie from My Fridge Food. I will let you know how it goes but so far my house smells divine… I love food that does that.

That is a majority of the dinners planned we need for the coming week. I still have some chicken drumsticks waiting to be bagged and frozen in meals. I know that is a whole lot of chicken but it is cheap and it is a meat the kids will eat (the little philistines won’t even touch lamb…. I swear they must have been swapped at the hospital, all 3 of them because I do not understand this!).

Any great freezer recipe suggestions for me? I would love to hear about your tried and true recipes that are quick and easy to make up ahead of time.

  1. I have a recipe that I freeze all the time. It’s called Chicken Diablo. Cut 1lb of chicken breast into 1-inch cubes and place into a bowl. Add 1 cup melted mutter, 1 cup yellow mustard, 1/2 cup honey, 1/2 teaspoon curry powder and a pinch of salt. Mix it all together so the chicken gets nice and coated. Place in ziplock bag and freeze until you are ready to cook it. Once you are ready, dump bag contents into a glass casserole dish and cook for 45 minutes at 450 degrees. It goes great on top of white rice.
